Keto Sausage Rolls  

In a small frying pan, add the oil and one onion. Place over medium heat and saute for 5 minutes, or until softened. Set aside to cool.In a mixing bowl, add the beef mince, oregano, and salt, followed by the cooled onion mixture. Mix well and set aside.
In a microwaveable bowl and then add 2 cups of grated cheddar cheese. Place in the microwave for 1-2 minutes until the cheese is completely melted. Then add 2 table spoons of cream cheese, then add 1 egg and then 2 cups of almond flour. Then mix very well. Then roll the the dough out between two sheets of none stick paper.Cut the rectangle in half lengthways.Spread half the meat mixture down the center of each dough rectangle.Gently roll up, ensuring that the seam is on the bottom. Cut each log into 9 pieces.Place the pieces onto your prepared baking sheet, leaving a small gap between each.Bake for 20-25 minutes until the pastry is golden brown and the rolls are firm to the touch.
