Keto Dinner Rolls

In a microwavable bowl, add the shredded mozzarella cheese and cream cheese. Microwave for approx 1 minute until the cheese is melted and the cream cheese has softened. Transfer the cheese into a larger bowl then add the eggs, almond flour, coconut flour, double cream, baking powder and salt.

Mix together very well using a spoon. Once the mixture has combined kneed the dough together using your hands for approximately 5 minutes. Wet your hands with some water or oil in order to handle the dough. This will prevent the dough from sticking to your hands.

Grab a handful of dough, then form it into a small ball and place on a baking tray lined with baking paper. Continue to make small balls until you have used up all of the remaining dough. You can form the balls to be your desired size.  Bake the dough balls at 205C degrees for 15-20 minutes or until golden brown on the outside and slightly firm on the inside. Allow too cool for 5 minutes before serving.

1 /4 of cup of coconut flour 
1/3  of cup of double cream 
1 teaspoon of baking powder
